How northern gardens shape the menu
Fresh herbs, leaves and soft fruit appear directly in warmer months, then return as ferments, preserves and dried aromatics through winter. These elements are combined with produce from regional farms and waters rather than presented as a self-sufficient estate claim. Guests can join a short garden walk, but the experience remains a hotel stay first, not an agricultural programme.
A practical three-day woodland stay
Spend the first afternoon close to the glasshouse and bathing garden, then use the second day for a longer forest route. A third night leaves space for a slower breakfast or another sauna session without compressing departure morning.
